Sparkling apple mocktail with raw lavender honey and lemon

A good mocktail needs more than sweetness: it should feel fresh, bright and clean on the finish. In this alcohol-free recipe, apple juice brings the fruit, lemon sharpens the flavour and sparkling water keeps the drink light. Our raw lavender honey adds a distinct floral note, without any heating.

It takes only a few minutes to make and works equally well as an aperitif or at brunch. We start with a reliable base, then show you how to adjust it to suit the apple juice you have.

Why apple, lemon and lavender honey work together

Apple juice has a rounded sweetness, but its intensity varies considerably between brands and varieties. Lemon provides the acidity needed to stop the drink feeling heavy. Our raw lavender honey is light golden, creamy and distinctly floral, so a small amount goes a long way.

There is no flavoured syrup or white sugar in this recipe. Honey is still a sweetening ingredient, so the aim is to measure it carefully rather than hide the natural flavour of the apple.

Sparkling apple, raw lavender honey and lemon mocktail

Ingredients for 4 glasses

  • 500 ml cloudy apple juice, well chilled
  • 250 ml sparkling water, well chilled
  • 2 tbsp our raw lavender honey
  • 1 unwaxed lemon
  • 1 small crisp apple
  • Ice cubes

Please note: honey should not be given to children under 12 months.

Method

  1. Make the honey base. Pour about 60 ml of apple juice into a small bowl. Add the honey and whisk until smooth. If the honey is particularly firm, use juice at room temperature for this step, then chill the mixture again.
  2. Add the lemon. Stir two tablespoons of lemon juice into the base. Cut a few fine strips of zest for serving, taking care to avoid the white pith.
  3. Build the mocktail. Combine the remaining apple juice with the honey-lemon base in a jug. Stir and taste before adjusting: add a little more lemon if the juice is very sweet, or a spoonful of water if it is already sharp.
  4. Prepare the glasses. Slice the apple very thinly. Fill four glasses with ice, add a few apple slices and divide the mixture between them.
  5. Add the sparkle. Top with sparkling water just before serving and stir once, gently. Finish with a strip of lemon zest.

How to blend creamy honey without heating it

Adding creamy honey straight to an icy jug can leave small pockets at the bottom. We first loosen it in a little apple juice. Whisking creates a smooth base that blends easily with the rest of the drink.

If the jar has been stored somewhere cool, simply let the amount you need sit at room temperature for a few minutes. There is no need to heat the honey for this recipe.

Finding the right balance

If your apple juice is very sweet

Add the lemon gradually, half a tablespoon at a time. Clear acidity makes the apple and lavender easier to taste without increasing the amount of honey.

If the juice is already tart

Start with just one tablespoon of lemon juice. Taste the base before adding the sparkling water, as the bubbles already make the drink feel livelier.

If you prefer a gentler floral note

Use one and a half tablespoons of honey for four glasses. We prefer to increase it in small steps: lavender should support the apple, not dominate it.

Can you make this mocktail ahead?

The apple, honey and lemon base can be prepared up to six hours ahead and kept covered in the fridge. Add the ice, fresh apple and sparkling water only when you are ready to serve. This preserves the bubbles and keeps the garnish looking fresh.

If you slice the apple in advance, toss it with a little lemon juice and refrigerate it in a sealed container.

Three easy variations

  • Ginger: add one very thin slice of fresh ginger to each glass and leave it for two minutes before serving.
  • Herbal: gently bruise one basil leaf between your fingers and add it to the glass. Keep it subtle so the lavender remains clear.
  • Lighter: replace 150 ml of apple juice with the same amount of extra sparkling water.

A simple, polished alcohol-free drink

With only a handful of ingredients, this mocktail balances fruit, acidity, bubbles and a floral finish. Our advice is to taste before every adjustment: the apple juice sets the tone, while the lemon and honey bring it into focus.
