Pistachio-filled dark chocolate cookies

There is something especially satisfying about breaking open a warm cookie and finding a soft pistachio centre inside. In this recipe, we pair dark chocolate with our Pistachio spread, made with 60% Iranian pistachios, Spanish orange blossom honey and Bourbon vanilla seeds. The contrast is simple: crisp edges, a tender middle and a smooth, nutty filling.

Ingredients for 10 pistachio-filled cookies

For the pistachio centres

  • 100 g Beechifa Pistachio spread

For the cookie dough

  • 115 g unsalted butter, softened
  • 90 g light brown sugar
  • 1 medium egg
  • 180 g plain flour
  • 4 g baking powder
  • 1 pinch of fleur de sel
  • 100 g dark chocolate, roughly chopped
  • 25 g unsalted pistachios, chopped (optional)

The key step: freeze the filling first

Line a small tray with baking paper. Spoon ten portions of our Pistachio spread onto it, using about two level teaspoons for each. Freeze for at least 45 minutes. Firming the centres makes the cookies easier to shape and helps the filling stay where it belongs while they bake.

How to make the cookies

1. Mix the dough

Beat the softened butter and brown sugar until evenly combined. Add the egg and mix again. Stir in the flour, baking powder and fleur de sel just until no dry patches remain. Fold in the dark chocolate and, if using, the chopped pistachios. Avoid overworking the dough so the cookies stay tender.

2. Chill

Cover the bowl and refrigerate the dough for 30 minutes. A cool dough is less sticky and spreads more slowly in the oven.

3. Shape around the pistachio centres

Divide the dough into ten equal pieces. Flatten one portion in your palm, place a frozen pistachio centre in the middle, then close the dough around it. Seal the join carefully and roll gently into a ball. Repeat with the remaining dough, keeping the filling portions in the freezer until needed.

4. Bake

Heat the oven to 180°C conventional, or 170°C fan. Arrange the cookies well apart on a lined baking tray. Bake for 10 to 12 minutes: the edges should be set while the centres still look slightly soft. Leave them on the tray for 10 minutes before moving them to a rack.

How to keep the centre soft

  • Do not skip the freezer: a firm centre is much easier to enclose.
  • Seal the dough fully: even a small opening can let the filling escape.
  • Watch the final minutes: overbaking dries the crumb and firms the centre.
  • Serve slightly warm: five minutes in a low oven restores the contrast between the cookie and its filling.

Easy variations

For a deeper cocoa flavour, replace 15 g of flour with 15 g of unsweetened cocoa powder. For more texture, press a few chopped pistachios onto each cookie before baking. You can also make smaller cookies, but reduce the filling and begin checking the oven after eight minutes.

Storage

Once completely cool, keep the cookies in an airtight container at room temperature for up to three days. The shaped, unbaked cookies can also be frozen on a tray and transferred to a container once firm. Bake them from frozen, allowing a few extra minutes and checking that the dough is cooked through.
