Roasted carrots are the kind of seasonal side dish we return to again and again: a short ingredient list, an easy oven method and a satisfying balance of sweetness, spice and freshness. Here, we use our eucalyptus honey to give the glaze a more distinctive aromatic finish.

Ingredients for four

  • 800 g carrots
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • A pinch of salt
  • Freshly ground black pepper
  • 1 generous tbsp of our eucalyptus honey
  • Finely grated zest of ½ unwaxed lemon
  • 1–2 tsp lemon juice
  • Flat-leaf parsley or coriander leaves, optional

Choose carrots of a similar size where possible. Halve or quarter thicker ones lengthways; small carrots can stay whole. Even pieces will roast at roughly the same pace.

How to make honey-roasted carrots

1. Heat the oven and prepare the carrots

Heat the oven to 200°C conventional or 190°C fan. Wash and peel the carrots if you wish, then dry them thoroughly. Cut them lengthways into pieces of a similar width.

Drying matters: excess water encourages steaming and makes browning more difficult.

2. Season for the first roast

Place the carrots on a large baking tray. Add the olive oil, cumin, salt and pepper, toss well, then spread everything into a single uncrowded layer.

Roast for 20–25 minutes, turning halfway through so the carrots colour evenly.

3. Glaze with honey near the end

Mix our eucalyptus honey with one teaspoon of lemon juice. If the honey has naturally crystallised, simply stir it with the juice; it will loosen on the hot carrots.

Remove the tray, drizzle over the mixture and toss quickly. Return to the oven for another 8–12 minutes. Watch closely at the end: the edges should be golden, not overly dark.

4. Add the finishing touches

Once the tray is out of the oven, add the lemon zest and taste. Use a few more drops of juice if you want a brighter finish, then scatter over parsley or coriander just before serving.

How do you know when the carrots are ready?

A knife should slide into the thickest part easily while meeting a little resistance. The carrots should hold their shape rather than collapsing on the serving plate.

Exact timing depends on their diameter and on your oven. Start checking after 28–30 minutes in total. Reduce the time for slender pieces; give large carrots an extra five minutes at a time.

Three ways to adapt the recipe

Make it more lemony

Add the zest at the table and use a touch more juice without increasing the honey. This puts the sweet-tart contrast centre stage.

Add gentle heat

Mix a small pinch of sweet paprika or chilli with the cumin. Start cautiously so the fresh note of our eucalyptus honey remains noticeable.

Roast another root vegetable alongside

Parsnips work well if cut to match the carrots. Avoid combining vegetables with very different cooking times, or the tray will roast unevenly.

What to serve with honey-roasted carrots

We like this side with roast fish or chicken, grains, or a lentil dish. It also suits a composed plate with green salad and a yoghurt sauce served separately.

For a special meal, transfer the carrots to a wide platter and add the herbs and zest at the last moment for a fresher-looking finish.

Can they be prepared ahead?

You can cut the carrots a few hours in advance and keep them covered in the refrigerator. Pat them dry again before seasoning.

They are best straight from the oven, while the edges are still lightly caramelised. Refrigerate leftovers and reheat them uncovered on a tray in the oven to bring back a pleasant texture.

  • Crowding the tray: leave space between the pieces for even roasting.
  • Adding honey at the start: glazing later gives you more control over browning.
  • Cutting uneven pieces: thin carrots can dry out before thick ones soften.

  • Not tasting before serving: adjust the salt and lemon once the carrots leave the oven.
