From Hive to Jar: How Is Honey Harvested and Prepared?

Between a frame leaving the hive and a jar reaching the table, honey passes through a sequence of careful steps. Some are easy to picture—uncapping, extracting and straining—while others rely mainly on time, observation and meticulous cleanliness.

Methods differ with the apiary, batch size and honey type. This guide follows a typical frame-extracted honey process; it does not claim that every producer uses exactly the same method.

Before the workshop: harvesting at the right point

Bees place nectar in the cells and gradually reduce its moisture. When they close a cell with a thin wax cap, the honey is described as capped. The beekeeper examines the state of the frames, together with seasonal and local conditions, before deciding to harvest.

Harvesting is not simply a matter of taking everything in the hive. Colony needs and available forage remain part of responsible apiary management. FAO guidance stresses that the finished product can only be as sound as the material selected and the care taken from the outset.

1. Remove the supers and protect the frames

Frames intended for extraction are taken to a clean room away from dust, insects and strong smells. Honey readily picks up surrounding odours, so containers and surfaces in contact with it must be suitable for food.

The journey from apiary to workshop matters: combs should be protected from damage, prolonged exposure and foreign material.

2. Uncap the comb

Uncapping removes the thin wax layer sealing the honey-filled cells. Depending on scale, a beekeeper may use an uncapping fork, a suitable knife or mechanical equipment.

A controlled, shallow action

The aim is to open the cells without unnecessarily damaging the comb. Cappings still hold a little honey, so they can be left to drain before the wax is recovered for appropriate uses.

3. Extract with centrifugal force

The opened frames are loaded into an extractor. As its basket turns, centrifugal force moves honey out of the cells; it runs down the drum wall and collects at the bottom. When sound, the comb remains in the frame and can be returned to the colony.

Extractors may be manual or powered, tangential or radial. Whatever their size, they separate honey from the comb without crushing the entire wax structure.

Why control temperature?

Temperature strongly affects honey’s flow. Warmer honey runs more easily, but excessive heat can alter its characteristics. Careful handling therefore avoids unnecessary overheating.

4. Strain out extraction debris

Freshly extracted honey may contain small wax fragments and other debris from opening the frames. Suitable mechanical straining removes these pieces.

This ordinary step should not be confused with intensive filtration. European rules distinguish “filtered honey”, where filtration removes a significant amount of pollen, from routine straining used to take out debris.

5. Allow the honey to settle

Tiny air bubbles and light particles can rise after extraction. Honey is placed in a closed, food-safe settling tank and left undisturbed so they separate naturally.

A layer of foam can form and is removed before filling. Despite the traditional name “maturateur” used in French, the tank does not ripen honey like cheese; it chiefly provides time for settling before bottling.

6. Check the batch before filling

Bottling does not begin merely because the honey looks clear. The beekeeper verifies that the lot meets applicable requirements and their own quality criteria. Moisture content is an important stability parameter and can be checked with an appropriate refractometer.

Traceability follows the lot as well: origin, harvest, storage, packing and the information required for labelling must be tracked through the producer’s system.

7. Fill clean jars and protect the lot

Honey is drawn from the tank into clean, food-compatible containers. Filling should minimise trapped air and keep jar rims clean. Lids are closed and the jars labelled according to the rules that apply.

Colour and texture can vary between batches. Floral source, season, natural composition and storage conditions all play a part. Later crystallisation is a common physical change in honey, not proof of a defect on its own.

How these steps shape tasting

Knowing the route from hive to jar changes how we look at honey. Fluidity is not the only marker of quality, colour does not fully predict aroma, and crystals do not erase the product’s character.
